you CANNOT go back and make one in 5, 6, 7, 8, 9,
They are UNTOUCHABLE. They become "JUNK CARDS".
If you make a Canasta in ACE'S and then you make a Canasta in 6's'you.
CANNOT go back and make K, Q, J, 10, 9, 8, 7. They are UNTOUCHABLE they 
become "JUNK CARDS". You can MELD them all. You just can't CANASTA them.
They are OK as a meld just UNTOUCHABLE as CANASTA'S.
