You can meld anything at anytime.  In order to make canastas, 
you must have 10s, 8s, and Aces (TEA) melded.  In order to go 
out, you must have a canasta in 10s, 8s, or Aces. A natural
canasta in 10s, 8s, or Aces is an automatic win.  If you
discard or continue playing you lose the auto win and must 
complete the game. No touching the pile!
